½ red cabbage, finely shredded
60g toasted macadamias, chopped coarsely
¾ cup coriander, chopped
½ cup mint leaves
2 celery sticks, thinly sliced diagonally
1 large carrot, peeled, cut into thin long strips (or use a julienne peeler)
½ red capsicum thinly cut into strips
4 green shallots, thinly sliced diagonally
¼ cup freshly squeezed lime juice
¼ cup extra virgin olive oil
1 tsp honey
Salt and pepper to taste
- To make the dressing, combine the oil, lime juice, and honey in a small jar and shake to combine. Season with salt and pepper, put in the fridge until ready to serve.
- In a large bowl, combine the cabbage, celery, carrots, capsicum, shallots, mint leaves, and coriander leaves. Toss with your hands.
- Sprinkle the toasted macadamias on top. Pour over the dressing when ready to serve. Enjoy the fresh flavours!
