2 Tablespoons Chia seeds
- 1 persimmon
- 1/4 cup coconut milk
- 1/2 cup coconut yoghurt
- 1 tablespoon honey
- Handful walnuts
- 1. Cut persimmon in half and scoop out the insides, and then place in a small glass jar with the Honey, Chia seeds and Coconut milk and stir thoroughly till it starts to thicken.
- 2. Place in the fridge for 2 -3 hours till it starts to set.
- 3. Take out of the fridge and layer with the Coconut yoghurt and serve up with crushed up walnuts on top
