Persimmon Chia Pudding

2 Tablespoons Chia seeds

  • 1 persimmon
  • 1/4 cup coconut milk
  • 1/2 cup coconut yoghurt
  • 1 tablespoon honey
  • Handful walnuts


  1. 1. Cut persimmon in half and scoop out the insides, and then place in a small glass jar with the Honey, Chia seeds and Coconut milk and stir thoroughly till it starts to thicken.
  2. 2. Place in the fridge for 2 -3 hours till it starts to set.
  3. 3. Take out of the fridge and layer with the Coconut yoghurt and serve up with crushed up walnuts on top
