Green Gazpacho

  • 4 Lebanese cucumbers
  • 1 ripe avocado
  • the juice of 1 lime
  • 1/2 a green capsicum, diced
  • 1 spring onion, chopped
  • 2 tbsp coriander leaves, chopped
  • a few mint leaves, chopped
  • a little extra water
  • pinch salt


  1. Cut off a few centimetres of cucumber, dice it and set aside. Pop the rest of the cucumbers into a blender, along with the avocado, lime juice and salt.
  2. Blend until smooth, adding a little water if it’s too thick and not moving around the blender.
  3. Garnish with the chopped cucumber, capsicum, spring onion, mint and coriander.
  4. Serve chilled.
